Banitsa - Bulgarian cheese pie

Banitsa is a popular Bulgarian cheese and yoghurt pie that turns out deliciously appetizing both hot and cold.

Ingredients
- Bulgarian or other natural yoghurt without additives 300 g
- Eggs 4 pieces
- Sirene or feta cheese 300 g
- Salt to taste
- Ground black pepper to taste
- Butter 120-150 g
- Filo dough 12 sheets
- Chicken yolk 1 piece
Cooking method
Beat the yogurt with four eggs, and then stir with coarsely crushed cheese, salt and pepper.
Melt a little in a water bath.

Take two sheets of dough and brush with oil, cover with another one on top and brush with oil again. Spread some of the filling on top and roll into a roll.
Do not separate the first two sheets, they should be on top of one another.
Fold the roll in the shape of a snail and place in a parchment-lined shape.
In the same way, form three more rolls and place them in the same shape, building up the original snail.
Whisk the yolk with the remaining butter and brush over the top of the pie.
Bake for about 25 minutes at 200 ° C.
