Cheese broccoli soup

Cheese soup with broccoli turns out to be rich and aromatic. Cheddar, vegetables and chicken broth create the perfect balance of flavor. Serve with croutons or croutons.

Ingredients
- Butter 3 tbsp spoons
- Onions ΒΌ pieces
- Flour 2 tbsp. spoons
- Chicken broth 360 ml
- Salt to taste
- Ground black pepper to taste
- Broccoli 450 g
- Carrots 1 piece
- Celery stalk 1 piece
- Cheddar 150 g
Cooking method
Melt the butter in a saucepan over medium heat.
Add finely chopped onions to the butter and fry until tender for 3-4 minutes.
Pour flour on a spoon so that there are no lumps. Continue stirring for about 5 minutes, until the mixture turns golden brown.

Pour in chicken broth, season with salt and black pepper, stir. Simmer for 10 minutes.
How to make the perfect chicken broth and 4 soups based on it
Top with chopped broccoli, carrots and celery. Continue simmering for about 20 minutes, until vegetables are tender.

Reduce heat to low. Add the grated cheddar to the soup and stir for about 5 minutes, until the cheese is melted.
Cheddar can be substituted for edam, Dutch or any other cheese. The main thing is that it melts well.
