Eggplant rolls with meat baked in the oven

Tomato sauce and a filling of meat, fried vegetables and herbs make these eggplant rolls juicy and flavorful.

Ingredients
- Onion 1 piece
- Carrots 1 piece
- Vegetable oil 1-2 tbsp. spoons
- Toast bread 3 pieces
- Water 500 ml
- Beef or other meat 700 g
- Garlic 3 cloves
- Greens to taste
- Salt to taste
- Ground black pepper to taste
- Eggplant 5-6 pieces
- Tomato paste 2 tbsp spoons
Cooking method
Chop the onion finely. Grate the carrots. Lightly sauté the onion with some oil, add the carrots and cook for a few more minutes.
Meanwhile, cut the crust off the bread. Place the crumb in a bowl and add 200 ml of water.
Squeeze the water out of the bread. Pass it, meat and garlic through a meat grinder.
Toss with grilled vegetables, chopped herbs, salt and pepper.
Slice the eggplants lengthwise into thin strips. Lubricate them with oil on both sides.
Place in a single layer on a parchment-lined baking sheet. Bake at 200 ° C for about 5 minutes.
Cool the vegetable strips slightly. Then put the meat mass on the edge of each of them and roll it into a roll.
Place them in a baking dish. Mix 300 ml of water with tomato paste and pour over the eggplant.
Bake for 30-40 minutes at 180 ° C.
