Chinese fried potatoes

Such a Chinese potato turns out to be very unusual - crispy on the inside, slightly soft on the outside and at the same time not browned.

Ingredients
- Potato 450 g
- Bulgarian pepper 1 piece
- Dried chili peppers 3-4 pieces
- Garlic 1-2 cloves
- Sunflower oil 60 ml
- Rice vinegar 4 tsp spoons
- Sea salt 1 tsp the spoon
Cooking method
Grate the peeled potatoes on a Korean carrot grater.
Place the potatoes in a bowl of cold water and let sit for 30 minutes. Then fold in a colander and dry with paper towels.

Cut the pepper into slices about the same size as the potatoes. Chop the chili and garlic.
Instead of one pepper, you can take two multi-colored halves.
In a large skillet or wok, heat oil over medium heat. Fry chili with garlic for 5-10 seconds, then add potatoes with pepper.

Fry for 2-3 minutes, stirring constantly. If you want softer potatoes, increase the cooking time by a minute or two.
Make sure the potatoes do not become completely soft.
Add vinegar and salt literally 20-30 seconds before cooking. Serve the finished dish immediately.
