Baked eggplant rolls with minced chicken

Eggplant rolls with minced meat are especially tasty and aromatic thanks to the vegetable sauce and brown cheese crust.

Ingredients
- Eggplant 3-4 pieces
- Salt to taste
- Vegetable oil 4 tbsp. spoons
- Carrots 1-2 pieces
- Bulgarian pepper 1 piece
- Onion 2 pieces
- Ground black pepper to taste
- Tomato paste 1-2 tbsp. spoons
- Water 100-150 ml
- Minced chicken 300 g
- Hard cheese 80 g
Cooking method
Cut the eggplants lengthwise into thin slices. Sprinkle with salt and leave for 5-10 minutes, then rinse and pat dry with paper towels.
In a skillet, heat 2 tablespoons of vegetable oil over medium heat and fry the eggplants for 2-3 minutes on each side. Cool it down.
Grate the carrots on a coarse grater. Chop the pepper and 1 onion finely. Fry them in oil for 4–5 minutes, season with salt and pepper. Toss with tomato paste and water. Cool it down.
Chop the second onion and mix with the minced meat. Season with salt and pepper.

Put minced meat on each piece of eggplant and wrap in a roll.
For convenience, the edges of the roll can be fastened with toothpicks.
Place the eggplant in a baking dish and top with the sauce.
Bake for about 25-30 minutes at 180 ° C. Sprinkle with grated cheese 5 minutes before cooking.
