Zucchini casserole with minced meat turns out juicy thanks to tomatoes and egg-sour cream filling. A layer of melted cheese makes it incredibly appetizing.

Ingredients
- Medium zucchini 3 pieces
- Salt to taste
- Onion 1 piece
- Vegetable oil 3 tbsp. spoons
- Minced meat 500 g
- Seasoning for meat to taste
- Tomatoes 3-4 pieces
- Hard cheese 100 g
- Eggs 2 pieces
- Sour cream 3-4 tbsp. spoons
Cooking method
Grate the zucchini on a coarse grater. If they are old, remove the skin.
Salt them, stir and leave for 15 minutes.
In the meantime, chop the onion. Heat almost all the oil in a skillet and fry the onion for 2 minutes.
Add meat and stir. Add salt and seasoning and cook for about 10 minutes.
Squeeze the courgettes well to remove any liquid that has come out.
Cut the tomatoes into slices. Grate the cheese on a coarse grater.
Use a fork or whisk to beat the eggs with sour cream and salt. The fill must be uniform.
Grease a baking dish with oil. Spread half of the zucchini over the bottom, then lay out the minced meat and cover with the rest of the zucchini.
Place the tomatoes on top, cover with the egg-sour cream mixture and sprinkle with cheese.
Bake in an oven preheated to 180 ° C for 40 minutes.
