Mexican cake "Three milk" - Lifehacker

Three types of milk are used for impregnation: concentrated milk, condensed milk with sugar and cream. This makes the cake very moist, sweet and tender.

Ingredients
- Butter 1 piece
- Flour 130 g
- Baking powder 1¹⁄₂ tsp spoons
- Salt ¹⁄₄ tsp spoons
- Eggs 5 pieces
- Sugar 200 g
- Vanilla extract 1 tsp the spoon
- Milk 80 ml
- Concentrated milk (condensed milk without sugar) 350 ml
- Condensed milk with sugar 260 g
- Whipping cream (at least 33% fat) 80 ml
- Whipping cream (at least 33% fat) 480 ml
- Sugar 2 tbsp. spoons
Cooking method
Oil a 33 x 22 cm pan. Preheat the oven to 180 ° C.
Sift flour, baking powder and salt together.
Separate the whites from the yolks.
Beat the yolks with a mixer with 150 g of sugar for about 2 minutes. You should have a light yellow homogeneous mass.

Add vanilla extract and milk to the yolk mixture and stir.
Vanilla extract can be substituted with a pinch of vanillin, but is best added to dry ingredients.
Beat the whites with a mixer into a white creamy mass. While whisking, add the remaining sugar gradually. The result should be a lush foam.

Combine flour and yolk mixture. Add protein and gently, slowly, stir.
The dough should not be too thick. It should drain slowly from the spoon or spatula.

Transfer the dough to the prepared mold. Bake for 30–35 minutes. Then cool it down.
Check the readiness with a toothpick: it should come out of the biscuit clean.
Mix all the impregnating ingredients.
Prick the entire surface of the biscuit with a fork without removing it from the mold.
Pour the milk mixture over the biscuit. There will be a lot of it, but it should be so. Leave to soak for 30 minutes.
Using a mixer, beat the cold cream and sugar into a creamy mass. This will take about 2 minutes.
Lubricate the biscuit with the resulting cream.
