Lecho with carrots and onions - Lifehacker

The traditional combination of tomatoes and bell peppers in this recipe is complemented by carrots and onions. The lecho turns out to be aromatic, thick and tasty.

Ingredients
- Tomatoes 3 kg
- Vegetable oil 200 ml
- Sugar 160 g
- Salt 2 tbsp heaped spoons
- Bell peppers 1,300 g (peeled weight)
- Large onions 5 pieces
- Large carrots 5 pieces
- Vinegar 9% 4 tbsp. spoons
Cooking method
Grind the tomatoes with the skin with a meat grinder or blender.
Transfer to a large saucepan. Add butter, sugar and salt.
While stirring, bring to a boil over moderate heat. Then cook for 15-20 minutes.
Meanwhile, cut the pepper into slices and the onion into half rings. Chop the carrots into cubes or grate on a coarse grater.
Place vegetables in tomato paste and stir. After boiling, cook, stirring occasionally, for 30–35 minutes.
Add vinegar 5 minutes before the end of cooking.

Spread lecho in sterilized jars and roll up.
