This salad has only four ingredients, but its taste and aroma are very rich. Lecho without vinegar is perfectly stored all winter.
Twist the tomatoes through a meat grinder or chop with a blender.
Pour the mixture into a deep saucepan and simmer for 1 hour over low heat. Stir occasionally.
Peel the peppers from seeds and partitions. Cut into not too small pieces or strips.
Add sugar and salt to the tomato puree and stir. Lay out the pepper.
Bring to a boil and cook, stirring occasionally, for about 15 minutes.
The pepper should not become too soft.
Place in sterilized jars and roll up. Turn over, wrap and cool. Keep cold.
