Simple Pear Jam - Lifehacker

Fruit slices are whole and slightly transparent, and syrup is thick and viscous. This pear jam will delight you on a cold winter evening.

Ingredients
- Pears 1 kg (peeled weight)
- Sugar 500 g
- Citric acid ¹⁄₄ tsp spoons
Cooking method
Skins and cores from pears. Cut into large wedges.
Place in a bowl, cover with sugar and leave for 1–2 hours. Stir the fruit several times during this time.
Transfer them along with the juice to a wide, heavy-bottomed saucepan.
Bring to a boil and reduce heat. Then cook, stirring occasionally, for 1–2 minutes.
Use a slotted spoon to transfer the wedges to a bowl. Pour citric acid into the syrup and boil it for another 10 minutes, stirring.
Put the pears back in the syrup. After boiling, cook for 2-3 minutes. Stir the mixture frequently.
Arrange the wedges in sterilized jars. Boil the syrup for a few more minutes. Then turn off the heat and stir until the foam disappears from the surface.
Pour the syrup into jars and roll up. Turn over, wrap and cool. Store in a cool, dark place.
