Khachapuri with potatoes and spinach without eggs and cheese

This recipe for khachapuri with potatoes was shared by the chef of a Georgian restaurant. Spinach, onions, green onions and saffron give the filling a special flavor.
Start with dough first. To do this, mix ⅓ part warm water with salt, sugar and yeast. Cover with a towel or cling film and keep in a warm place for 10-15 minutes.
If the kitchen is cool, leave the dough on the battery, in a preheated microwave or oven (temperature no more than 50 ° C).
A large foam cap should appear on the finished dough.
If it doesn't, chances are you got bad yeast or was cold. Do not use this dough, prepare a new one.
Pour flour into a bowl. Add the dough and, pouring in the remaining water in portions, knead the dough.
Cover the bowl with a warm, wet towel and leave in a warm place for 1–2 hours until the dough has doubled.
There should be no drafts in the room. To prevent the dough from freezing, you can place it next to the battery or in an oven preheated to 50 ° C.
Remember the dough, cover again and leave in a warm place to rise a second time.
In the meantime, make the filling. Boil the potatoes and fry the finely chopped onions.
How and how much to cook potatoes
Mash the potatoes and cool. Chop spinach and green onions finely.
Combine mashed potatoes, fried and green onions, spinach, saffron and salt.
You should have made about 1¹⁄₂ kg of dough. Divide it into 250g portions.
Roll out each part of the dough not too thick, but not too thin. Try to guide the rolling pin from the middle to the edges. If desired the dough can be stretched on the board with your hands.
Place 250 g of the prepared filling on each layer.
Gather the edges of the dough in the center. Turn the piece over and place it on the board.
Then press and stretch the future khachapuri with your hands.
Don't worry if the dough breaks.
Transfer the khachapuri to a greased or parchment-lined baking sheet.
Place in an oven preheated to 180 ° C and bake for 25 minutes. You can make the temperature higher, then the khachapuri will be ready even faster.
