Sand cake with apricots

Thin crunchy dough and sweet filling with fruit pieces. This apricot shortcrust cake will instantly disappear from the table.
Combine 315 g flour and salt. Add cold butter, cut into small cubes.
Stir until finely crumbled. While stirring with a fork, pour in 1 spoonful of cold water.
The dough should gather into a lump. Add a little more liquid if necessary.
Knead the dough with your hands a little so that it becomes smooth. Divide into two parts, one of which is slightly larger than the other.
Lightly dust the table with flour and roll out most of the dough to fit a 23 cm mold. Place the layer in a bowl and press it to the bottom and sides.
It's okay if the dough hangs a little over the edges of the mold.
Peel the apricots and cut into large pieces.
Combine 150-200 g of sugar, 4 tablespoons of flour and cinnamon. Add lemon juice and apricots and stir.
The amount of sugar depends on how sweet your apricots are.
Place the fruit filling into the dough pan.
Roll out another piece of dough into a thin layer. Cut into strips and make a grate on the pie, laying the strips on top of each other.
Bake the cake in an oven preheated to 220 ° C for 35–45 minutes. It should brown, and the filling should begin to boil and thicken a little.
Sprinkle a teaspoon of sugar over the baked goods immediately after cooking.
