Pie with apricots on kefir

Pie with apricots on kefir turns out to be tender, airy and soft. Pieces of sweet fruit go perfectly with the dough.

Ingredients
- Flour 270 g + for sprinkling
- Baking powder 7 g
- Butter 150 g + for lubrication
- Sugar 140 g
- Salt 1 pinch
- Vanillin 1 pinch
- Eggs 3 pieces
- Kefir 140 ml
- Apricots 350 g
- Powdered sugar to taste
Cooking method
The ingredients for the pie should be at room temperature, so remove everything you need from the refrigerator beforehand.
Combine sifted flour and baking powder.
Beat the softened butter with a mixer. Without stopping, gradually add sugar, salt and vanillin.
Add the eggs in turn, stirring thoroughly with a mixer after each addition.
Pour in kefir, beat, add flour and knead to a homogeneous dough.
Cut half of the apricots into small pieces, and the rest into large pieces.
Put small pieces into the dough and stir.

Grease a baking dish and sprinkle with flour. Place the dough in there.
Cookware with a diameter of 23 cm works best.
Arrange large pieces of fruit on top.

Bake at 180 ° C for 50–55 minutes.
Check the readiness with a toothpick: it should come out of the cake dry.
After cooling down, you can sprinkle the cake with icing sugar.
