These berries are suitable not only for compotes. Try the refreshing sweet and sour redcurrant ice cream, which requires only three ingredients.
Place the wide lidded container in the freezer while preparing the ice cream mass.
Bring the currants to a simmer over medium heat. The berries should begin to burst.
Grind them through a sieve. No bones or skins are needed.
Add sugar and mix thoroughly. Add more sand if necessary. Cool it down.
Whip the cold cream with a mixer until a fluffy creamy mass is obtained.
Gently add the cream to the berry mass.
Transfer to container and freezer for at least 2 hours.
Let the ice cream soften at room temperature for 20-30 minutes before scooping up the ice cream.
