Vegetable okroshka is a light summer dish that perfectly refreshes in the heat. It is prepared without meat and sausage, but it still turns out to be very satisfying.
Boil the potatoes until tender in 20-25 minutes. Cool and cut into small pieces or grate on a coarse grater.
How and how much to cook potatoes
Cut the cucumbers and radishes into strips. Chop the greens.
Place the potatoes with radishes, cucumbers, and herbs in a bowl.
Mix yogurt with cooled boiled water. Make sure it dissolves.
Add more or less water depending on how thick okroshka you prefer.
Pour the yogurt and water mixture over the vegetables. Season with salt, pepper, stir and leave in the refrigerator for 30-40 minutes.
