This Turkish dish is called mujver. Zucchini pancakes are delicious on their own, but with feta cheese, garlic, herbs and paprika they become even more interesting.
Grate the zucchini or zucchini on a coarse grater. Put in a colander, lightly salt, stir and leave for 30 minutes.
Rub the feta. Chop the onion, herbs and garlic.
Squeeze excess liquid out of the courgettes.
Beat the eggs with a fork or whisk. Combine them with flour.
Add zucchini, onions, herbs, garlic, paprika, salt and pepper.
Mix thoroughly. Better to do it with your hands.
Heat the oil in a skillet over medium heat. Spoon the dough into it and fry until golden brown on both sides.
Transfer the finished pancakes to a paper towel to absorb excess fat.
