Curry with potatoes and green beans

There are a lot of spices in curry with potatoes: cumin, turmeric, chili, nutmeg and smoked paprika. Garlic and ginger add even more flavor to the dish.

Ingredients
- Potatoes 900 g
- Fresh or frozen green beans 270 g
- Onion 1 piece
- Garlic 3 cloves
- Vegetable oil 1 tbsp. the spoon
- Grated ginger ¹⁄₂ tbsp. spoons
- Curry 1-1¹⁄₂ tbsp spoons
- Salt to taste
- Ground cumin ¾ tsp spoons
- Ground black pepper ¹⁄₂ tsp spoons
- Turmeric ¹⁄₃ tsp spoons
- Ground chili 1 pinch
- Ground nutmeg ¹⁄₄ tsp spoons
- Smoked paprika ¹⁄₄ tsp spoons
- Vegetable broth or water 720 ml
- Coconut milk 160 ml
Cooking method
Cut the peeled potatoes into pieces. Remove the tips of fresh beans and cut the long beans. Chop the onion and garlic finely.
In a deep saucepan or saucepan, heat the oil over medium heat. Add the onion and cook for 3-4 minutes.
Add garlic, ginger and all the spices and stir. Then add potatoes and beans there and stir again.

Pour in broth or water. The broth will make the curry taste more intense. Bring to a boil.
How to make vegetable broth from what you find in the kitchen
Reduce heat and simmer, covered for 20-25 minutes. The potatoes should be soft.
Whisk the coconut milk and starch in a bowl. Pour into curry, stir and cook for a few minutes until the dish thickens.
