Mexican Lime Marinated Chicken

The mixture of lime juice, parsley, garlic and spices gives the bird a bright citrus aroma and pleasant taste. Chicken in the marinade will turn out to be rosy and tender.

Ingredients
- Olive oil 4 tbsp spoons
- Limes 2 pieces
- Parsley 4-6 sprigs
- Garlic 2 cloves
- Ground cumin ¹⁄₂ tsp spoons
- Ground chili 1 pinch
- Chicken thighs 4 pieces
- Salt to taste
- Ground black pepper to taste
Cooking method
Whisk half the butter, lime juice, finely chopped parsley, chopped garlic, cumin and chili.
Place the chicken in the marinade and stir until it is coated on all sides.
Refrigerate for at least 30 minutes and maximum 2 hours.
Then heat the remaining oil in a skillet over medium-high heat.
Season the thighs with salt and black pepper. Place them skin side down in a skillet. If there is still marinade, pour over the chicken.
Fry for about 6 minutes, until crispy and golden brown. Turn over and cook for 2 more minutes.
Transfer the chicken to a baking dish. Place in an oven preheated to 220 ° C for 10-12 minutes.
When serving, pour over the juice and marinade that remains in the mold.
