Stuffed zucchini with meat, rice and vegetables

Zucchini stuffed with rice and meat is baked on a vegetable pillow with sour cream and cheese. It turns out very tasty and original.

Ingredients
- Rice 1 tbsp. the spoon
- Salt to taste
- Carrots 2 pieces
- Onion 2 pieces
- Vegetable oil 2-3 tbsp. spoons
- Minced meat 300 g
- Egg 1 piece
- Ground black pepper to taste
- Zucchini 3-4 pieces
- Sour cream 100 g
- Hard cheese 100 g

Boil rice until half cooked in salted water.

Grate the carrots on a coarse grater. Chop the onion finely.
Heat oil in a skillet. Fry the onions and carrots, stirring occasionally, for 5-7 minutes. Cool slightly.
Mix the smaller part of the frying with the rice, minced meat, egg, salt and pepper.
Cut off the ends of the courgettes. Cut across about equal kegs.
Core the courgettes so that there are holes on both sides.
Cover the bottom of the baking dish with half the vegetable roast.
Fill the zucchini with the meat mixture and place them in the dish, slices up.
Top with the remaining roast and brush with sour cream.
Place in an oven preheated to 180 ° C for 50–55 minutes.
Then sprinkle the zucchini with grated cheese and bake for another 5-10 minutes.
