Okroshka with beets on kefir

An unusual version of the beloved by many cold soup. Okroshka with beets acquires a bright, beautiful color, as well as a sweetish taste and aroma.

Ingredients
- Beets 2 pieces
- Eggs 3 pieces
- Fresh cucumbers 1-2 pieces
- Radish 6-7 pieces
- Green onions 5-7 feathers
- Dill 4-5 branches
- Sour cream 100 g
- Salt to taste
- Ground black pepper to taste
- Kefir 1 300 ml
- Lemon juice 2 tbsp spoons
- Boiled potatoes 2-3 pieces
- Sausage or boiled meat 200 g

Boil the beets, cool and peel.

Hard boil the eggs. When they have cooled, remove the shell. Separate the whites from the yolks.
How and how much to cook hard boiled eggs
Finely chop the whites, cucumbers, radishes and optionally potatoes and meat. Chop the herbs. Grate the beets on a coarse grater.
Grind the yolks with dill, a little sour cream, salt and pepper. You should have a smooth paste.
Pour kefir into a bowl or saucepan. Add sour cream, yolk dressing, and all other ingredients. Season with salt and pepper and stir.
Refrigerate soup for 1-2 hours.
