Pork sicheniki with scrambled eggs

Sicheniki are Ukrainian cutlets made from meat, fish or vegetables. In this recipe, fried eggs were added to the pork to make it even tastier.

Ingredients
- Lard 50 g
- Onion 1 piece
- Eggs 4 pieces
- Salt to taste
- Ground black pepper to taste
- Pork 500-600 g
- Breadcrumbs 70-80 g
- Vegetable oil 2-3 tbsp. spoons
Cooking method
Cut the lard into small pieces, place in a skillet and melt the fat out of it over medium heat. This will take about 5-10 minutes depending on the size of the pieces.
Remove the lard from the pan and fry the chopped onions in the fat for 5-6 minutes until golden brown.
Beat three eggs with salt and pepper, pour into a skillet with onions and cook for a few minutes. Do not brown too much.
Put the prepared scorm with onions on a plate, cool and chop finely with a knife.
Pass the pork through a meat grinder or chop finely.
Mix the prepared minced meat with the scrambled eggs, salt and pepper. Form small patties.
Beat each piece on the table in a few minutes. Just lift it off the work surface and throw it back with light effort, repeat several times. This will make the mass more homogeneous.
Beat the remaining egg. Heat oil in a skillet over medium heat.
Dip each piece in an egg, roll in breadcrumbs, and then fry until golden brown, about 3-5 minutes on each side.
Place the toasted chickens in a baking dish and cover with foil or a lid. Bake for 30–35 minutes at 180 ° C.
