Lobiani with red beans and cilantro

Lobiani - traditional Georgian lean pies, or flatbreads, are very hearty and aromatic. Try it yourself and see.
Soak the beans in water for 8 hours or overnight. Boil until soft, it will take at least an hour. Then cool it down.
How to cook beans: simple and straightforward instructions
Combine yeast with sugar and a pinch of salt. First add 50-60 ml of warm water, stir, and then pour in the remaining liquid and 2 tablespoons of oil.
If you are using dry yeast, take 8-9 g and mix it with flour, sugar and salt first, and then add the liquid ingredients.
Gradually add 700 g of sifted flour and knead the dough. Cover it with a towel and let it warm for 30 minutes.
In a skillet, heat the remaining oil over low heat. Fry the finely chopped onion until transparent in about 7–8 minutes, stirring constantly, no browning is required.
Crush the beans with a special mashed potatoes or use a blender, it will work out faster. The mass should be thick.
Toss the beans, onions, salt, spices, and chopped cilantro. Cool it down.
Sprinkle the table with flour, put the dough that has come up on it, knead it slightly and divide into five parts.
If you want larger cakes, make smaller pieces.
First assemble each part into a ball, and then roll it into a round cake with a rolling pin.
Place ⅕ of the filling in the center of the cake. Pin the dough towards the center.
Slightly flatten the filling with your hands or gently roll out with a rolling pin.
Transfer the lobiani to a lightly floured baking sheet with the flat portion on top. Spread out a little with your hands and pierce several times with a fork.
Bake the lobiani at 200 ° C for about 10-15 minutes.
