Chanakhi is a delicious Georgian meat dish with eggplants, tomatoes and other vegetables that go perfectly with each other.

Ingredients
- Eggplant 2-3 pieces
- Salt to taste
- Beef 800 g
- Potatoes 4-5 pieces
- Tomatoes 3-5 pieces
- Bulgarian pepper 2-3 pieces
- Onions 3-4 pieces
- Vegetable oil 70 ml
- Fat tail fat 50 g
- Spices to taste
- Greens 50-100 g
- Garlic 3 cloves
- Ground black pepper to taste
Cooking method
Cut the eggplants into large pieces. Season with salt and leave for 30 minutes. Then rinse and dry with paper towels.

Cut meat, potatoes, tomatoes and peppers into medium-sized pieces, onions into halves or quarters of rings.
For this dish, you can also use lamb.
Heat vegetable oil in a skillet over medium heat. Fry the meat for 4-5 minutes and place it on a plate.
Fry the eggplants, potatoes, bell peppers and onions one by one in a skillet. After 4-5 minutes of cooking, place the vegetables on a plate and toss the next batch into the pan.

Layer meat, onions, eggplants, potatoes, tomatoes and bell peppers in pots. Add a little salt, spices and fat tail after each layer.
Instead of fat, you can use butter or unsalted lard.
Sprinkle with herbs, chopped garlic and black pepper on top.
Simmer in an oven preheated to 180 ° C for about an hour and a half, until the meat becomes tender.
