The dough for this pastry is kneaded very simply and quickly, and it takes only 30 minutes to bake. Sour cream cupcakes come out soft and tender.
Whisk the eggs and salt lightly until smooth.
Add sugar and stir.
Add sour cream and whisk again thoroughly.
Add vanilla sugar and melted butter. It shouldn't be very hot.
Sift flour along with baking soda, add to the butter mixture and knead to a homogeneous dough.
Divide dough into muffin tins. If you have a metal mold, insert paper molds into the slots.
Fill the molds with dough not to the very top, but about two-thirds.
Place in an oven preheated to 200 ° C for about 30 minutes.
Check the readiness with a toothpick: it should come out of the muffins dry.
