The dressing of yolk with Dijon mustard and olive oil adds a special piquancy to this salad. It goes well with chicken, cucumbers and eggs.
Boil the carrots, cool, peel and grate on a coarse grater.

Hard-boiled eggs for 10 minutes, cool and peel. Set aside one or two yolks.

Cut the cucumbers, chicken and eggs, except for the deferred yolks, into small pieces. Chop the parsley.
You can use boiled chicken.
Mash the yolk with a fork and combine with olive oil and mustard.
Place chicken, eggs, carrots, cucumbers, and parsley in a bowl. Season with salt, stir and pour over the dressing.
