Beef kharcho with tkemali

Ingredients
- Beef 500 g
- Water 2¹⁄₂ l
- Tkemali 2 tbsp. spoons
- Onion 2 pieces
- Long grain rice 60 g
- Garlic 5 cloves
- Walnuts 50-70 g
- Bay leaf 2 pieces
- Salt to taste
- Ground red pepper ¹⁄₃ tsp spoons
- Imeretian saffron ¹⁄₄ h. spoons
- Hops-suneli 1 tsp the spoon
- Coriander ⅔ tsp spoons
- Cilantro 1 bundle
Cooking method

Rinse the beef under running water and cut into portions.
The meat should not be lean.
Cover with cold water and cook for about 2 hours. Remember to remove any foam that forms on the surface.

Add tkemali to the broth with meat. After a few minutes, toss in the rather coarsely chopped onion.
Instead of tkemali, you can take tklapi. In this case, soak a 10 x 10 cm piece in water when you start boiling the meat.
Simmer for 10 minutes over low heat. Then add rice.
Crush the garlic with walnuts in a mortar or grind in a blender. Put this mixture into the soup 10 minutes after the rice.
After another 10 minutes add lavrushka, salt, pepper and other spices, and after another 5-7 minutes add chopped cilantro.
Cook the kharcho for another 5 minutes, and then leave it under the lid for 10 minutes.
