Apples add an original sweetness to this rich creamy cauliflower soup. Onions fried in butter will make it very aromatic.
Cut the onion into half rings.
If necessary, cut the cabbage into very small inflorescences.
Peel and core the apples and chop.
Melt the butter in a skillet and sauté the onions until soft. Don't brown it too much.
Add cabbage and apples to the onion and fry for another 5 minutes.
Add the crumbled stock cubes and milk and bring to a boil.
Reduce heat until soup simmer. Cook for 5 minutes or until ingredients are tender.
Purée the soup with a blender until smooth.
Sprinkle with pepper and chopped herbs before serving, if desired.
