Lush pancakes with ricotta

Ingredients
- Ricotta 1 glass
- Flour 1 glass
- Baking powder ¹⁄₂ tsp. spoons
- Sugar 1¹⁄₂ tbsp. spoons
- Salt ¹⁄₄ tsp spoons
- Eggs 2 pieces
- 3⁄₄ cup milk
- Vanilla extract ¹⁄₂ tsp spoons
- Butter 1 piece

If the ricotta looks very runny, place it on a sieve and let sit for 30 minutes.

Combine flour, baking powder, sugar and salt.
Separate the whites from the yolks.
Mix the yolks with the ricotta, milk and vanilla extract.
Add flour mixture and stir gently.
Separately, with a mixer, beat the whites into a fluffy, stable creamy mass.
Add a small amount of protein mass into the dough, mix and carefully add the rest.
Heat a skillet over medium-high heat and brush with butter.
Spoon or ladle the dough into the pan, keeping the pancakes not too large.
Fry for 3-4 minutes on one side. Bubbles should appear on the surface.
Turn the pancakes over and cook on the other side for 2-3 minutes.
