Beetroot and orange salad with nuts and feta

Ingredients

• Beets 4 pieces
• Orange 2 pieces
• Walnuts ¹⁄₄ – ¹⁄₂ cup
• Lettuce leaves 2-3 bunches
• Feta 2-4 tbsp. spoons
• Salt to taste
• Ground black pepper to taste
• Olive oil 3 tbsp spoons
• Orange juice 2 tbsp spoons
• Red wine vinegar 1 tbsp the spoon
• Dijon mustard 1 tbsp the spoon
• Salt ¹⁄₄ tsp spoons
• Ground black pepper ¹⁄₄ tsp spoons

Cooking method

• Boil the beets until soft. This will take 1.5-2 hours. Cool and clean.

• Clean oranges of skins and streaks.

• Cut the beets and orange pulp into large pieces. Chop the nuts.

• Place lettuce leaves on a dish, put beets and oranges on them.

• Sprinkle with nuts and crumbled feta. Season with salt and pepper.

• Combine all the dressing ingredients and pour over the salad.
