Wet cupcake with kefir and dried apricots

This kefir cupcake turns out to be tender, juicy and very tasty. And the combination of dried apricots and orange peel gives it an amazing aroma.

Ingredients
- Butter 125 g
- Sugar 1 glass
- Eggs 2 pieces
- Kefir 1 glass
- Flour 1¹⁄₂ cup
- Baking powder 1 tsp the spoon
- Salt 1 pinch
- Dried apricots 100 g
- Orange zest 1-2 tsp spoons
Cooking method
Melt the butter and cool.
Beat it together with sugar with a mixer.
While whisking, add the eggs one at a time.
Pour in kefir and mix with a mixer.
Sift flour, baking powder, and salt together.
Pour the flour mixture into the egg and knead the dough.
Cut dried apricots into small pieces and put into dough together with grated zest. Mix thoroughly.
Cover the bottom and sides of the baking dish with parchment. If the mold is silicone, you do not need to do this.
Pour the dough into the mold.

Place in an oven preheated to 180 ° C for 40-50 minutes.
Check the readiness with a toothpick: it should come out of the cake dry.
