Cauliflower soup with spinach and peanuts

Cauliflower Soup is a versatile dish as it is quick and easy to prepare and can serve as a great lunch both at home and at work.

Ingredients
- Leek 2 stalks
- Vegetable oil 2 tbsp. spoons
- Garlic 3 cloves
- Spices to taste
- Cauliflower 1 head
- Water to taste
- Cream to taste
- Spinach 50 g
- Olive oil 2 tbsp spoons
- Peanuts to taste
Cooking method

Rinse and slice vegetables. Send the onion first to the saucepan or directly to the pan. You can fry it in any vegetable or animal fat. Once the onions are translucent, add the garlic and any spices available.
In our case, curry and chili flakes are perfect with cauliflower. But you can make a soup with carrots and ginger, potatoes and Provencal herbs, or parsnips and turmeric, for example.

Next, add the cauliflower to the pot. Fill it with water, but just enough to barely cover the vegetables. Now it remains to wait until all the contents of the dishes are softened.

Then puree vegetables with broth, and if necessary, rub through a sieve. Add cream to your liking.

For color, add some spinach, after sweating with garlic and olive oil, then puréeing. Sprinkle with chopped peanuts on top.
Any nuts, seeds or simple crackers can be used.
