Tiramisu with mascarpone and savoyardi cookies

Savoyardi cookies are soaked in cold coffee and covered with an airy cream of eggs and mascarpone cheese. This delicate tiramisu will be appreciated by true gourmets.

Ingredients
- Eggs 4 pieces
- Sugar 100 g
- Mascarpone 500 g
- Savoyardi biscuits 350 g
- Espresso coffee 300 ml
- Cocoa to taste
- Dry white wine or other alcohol 3 tbsp. spoons
Cooking method
Carefully separate the whites from the yolks.
Mash the yolks with sugar.
Add the mascarpone to the yolks and mix thoroughly.
Beat the whites with a mixer until they become thick foam.
Put the protein mass in parts into the yolk-cheese mass and mix gently.

Dip each cookie in cold coffee for a couple of seconds and place tightly in a mold in one layer.
Optionally, you can add wine, rum, liqueur, brandy or cognac to the coffee.
Put half of the cream on sticks, smooth.
Put the sticks soaked in coffee on the cream again.
Cover them with the remaining cream and smooth it out.
Refrigerate tiramisu for 5-6 hours.
Then sprinkle it through a cocoa sieve.
