Eggplant and Tomato Pasta

This dish is very simple, but at the same time very tasty and aromatic. Preparing pasta with eggplant and tomatoes is as easy as shelling pears.

Ingredients
- Eggplant 1 piece
- Salt to taste
- Tomatoes 2-3 pieces
- Onion 1 piece
- Pasta 400 g
- Olive oil 2 tbsp spoons
- Spices to taste
- Apple juice 3-4 tsp spoons
- Basil to taste
Cooking method
Peel the eggplant, cut into slices, salt and let stand for a while.
Boil the tomatoes with boiling water to easily peel them. Cut the pulp into cubes.
Chop the onion finely.

Boil the pasta in salted water until al dente according to the instructions on the package.
How and how much to cook pasta so that they do not stick together
Squeeze the eggplant slices and cut into cubes.
Fry the onions in oil until golden brown, add the eggplant and fry a little more.
Send half of the tomatoes to the eggplant and onion, season with spices and simmer for 10 minutes.
Then add the remaining tomatoes, salt and season with apple juice.
Mix the vegetable mixture with the pasta. Garnish with basil leaves.
