3-Ingredient Italian Nut Cake

Ingredients
- Walnut kernels 340 g
- Eggs 4 pieces
- Sugar 225 g
- Lemon zest 1 piece
- Powdered sugar to taste

First, turn the walnut kernels into flour - using a high-speed blender or a conventional meat grinder.

Next, separate the egg yolks from the whites and beat until white with sugar.
For aroma, the recipe can be supplemented with lemon zest. It is added directly to the whipped yolks.

Turn the whites into a strong foam separately.

Combine the nut flour with the yolks until a thick paste is obtained.
Add the whipped egg whites to it in portions, gently stirring all the ingredients to retain more air.

Spread the dough in a parchment-covered and oiled pan (ours is 20 centimeters in diameter), and then leave to bake at 180 degrees for about an hour.
Since the nuts burn quickly, the cake may need to be covered with a sheet of foil for the last 10-15 minutes of cooking so that the surface does not darken too much.

Allow the finished cake to cool completely. You can dust the surface with powdered sugar before serving.
This is one of those desserts that gets even better the next day.
