Lemon rice with chicken and herbs in one pan

This flavorful chicken and herb lemon rice is cooked in the same skillet. This is a healthy and quick dinner option.

Ingredients
- Chicken fillet 2 pieces
- Salt to taste
- Pepper to taste
- Vegetable oil 30 ml
- Lemon 1 piece
- Rice 1 glass
- Italian herbs 3 tsp spoons
- Chicken broth or water 520 ml
- Parsley to taste
Cooking method
Clean the chicken fillet from films and possible skin residues. Rub with a pinch of salt and pepper.

Fry in hot vegetable oil exactly until the fillet is browned.
Squeeze the juice out of one half of the lemon. Cut the second into circles.
Transfer the meat to a plate, and in the same frying pan, without rinsing it, add the washed rice.
Mix the rice with 2 teaspoons of dried herbs and cover with half the lemon juice.
Spread the rice evenly over the pan and place the chicken fillet on top.

Drizzle the leftover lemon juice over the fillet and sprinkle with the leftover Italian herbs. Pour in chicken broth or water.
Covering the dish with a lid, let the rice and chicken cook over low heat for 20-25 minutes.

Sprinkle with parsley and lemon slices before serving. The latter can be acidified rice and chicken if desired.
