A couple of brownies with hearty filling are a great option for a snack. Quesadillas with chicken, corn, and tomato salsa are convenient for lunch boxing.
Boil the chicken and start making tortillas. Combine all the necessary ingredients, knead the dough, let it sit for 10 minutes, then divide into portions and roll out thinly. The number of servings depends on the desired size of the cake.
You can buy ready-made tortillas, but we recommend homemade tortillas - they will better hold the juice of fresh vegetables.
Fry the resulting blanks in a dry frying pan until golden brown.
Simple tomato salsa is one of the components of the filling. To prepare it, chop the tomatoes, mix with chopped onions, cilantro leaves, hot sauce, add a pinch of salt and pour over everything with lime juice.
Pour some of the cheese on top of the flatbread. The cheese layer will act as a barrier to keep it from getting wet.
Put the tomato salsa on top (drain the excess juice beforehand), sprinkle everything with corn kernels and distribute the boiled chicken disassembled into fibers. Cover everything with cheese and then a second tortilla.
Do not overdo it with the filling, including cheese, otherwise the cake will not be whole, all the contents will fall out when eaten.
Fry the quesadilla on a dry grill or skillet until golden brown and crisp.
Cut the flatbread into quarters and serve with sour cream or guacamole sauce.
