If you are looking for leftover mashed potatoes from yesterday's dinner and want to turn a side dish into a new dish, then potato balls are ideal.
Of course, you can specially prepare mashed potatoes for just this recipe, but in this case, keep in mind that it should be cooled as much as possible.
How to make the perfect mashed potatoes
If you are using freshly mashed potatoes, chances are that it doesn't hold its shape very well. In this case, include flour in the ingredients, up to 1 cup.
The amount of flour is determined individually: the finished mixture should be molded into a ball and not be excessively sticky.
Combine puree with feta cheese and chopped herbs.
Other filling options: hard cheeses, pieces of bacon, ham or fish, fried vegetables, spices, dried herbs, garlic.
Divide the mixture into portions and roll into balls (the optimal amount is 20-24).
Prepare the breading ingredients: flour, beaten eggs, and bread crumbs.
Sprinkle each ball of mashed potatoes with flour, dip in an egg and roll in breadcrumbs.
If the mass is sticky, then sprinkle flour on your hands and roll the balls with them.
Immerse the breaded balls in hot oil and fry for 3-4 minutes until a pronounced golden hue. An alternative to frying is baking for 7-10 minutes at 200 degrees.
