Quality fish has no external damage. It has an even color without spots, and the surface is slightly damp, without sticky mucus or plaque. It is elastic and not loose to the touch; after pressing, it recovers its shape well.
If the cod is sold whole, additionally appreciate the gills: they should be deep red, without spots. The eyes are not cloudy, transparent.
The smell is natural, fishy and fresh, not harsh and free of impurities.
When buying frozen cod, make sure there is very little ice in the package.

Frozen fish to start, leave to thaw in the refrigerator for a few hours.
If you have whole cod, rinse it under running water, brush, remove head, tail, fins and entrails. Then rinse again and divide into medium pieces.

How much to cook cod
Cooking time is 20 minutes on average. To speed up the process, you can cut the fish into smaller pieces.
The finished cod is soft, a fork can easily enter it, and the fillets are easily separated from the bones.

How to cook cod on the stove
Place the fish in a saucepan. Pour in water so that it covers the cod. Season with salt to taste and season with your favorite spices. You can also add chopped onions with carrots and even vegetable oil: it is believed that fish is juicier with it. Enough 1-2 teaspoons.
Bring to a boil over high heat, remove the foam and cook over medium heat for about 20 minutes, or 15 minutes if the pieces are small. Reduce heat to low 5 minutes before cooking.
