How and how much to cook chanterelles

Here's how to peel and cook mushrooms for soup, before pickling, freezing and frying.
How to prepare chanterelles
Go through the mushrooms and separate from foliage and other large debris. Place the chanterelles in a container of cold water. Wash thoroughly to remove any dirt. You can use a cloth or soft sponge. Pay special attention to the places under the caps. It is better to change the liquid a couple of times.
Cut off the bottom of the legs. Chanterelles can be left intact, especially small ones, or cut into several pieces.
Frozen chanterelles should be allowed time to thaw - 1-2 hours. Or you can microwave them for 2-3 minutes.
How much to cook chanterelles
The cooking time depends on how the mushrooms will be used next. After boiling, fresh chanterelles should be boiled:
- for soup - 15–20 minutes;
- before marinating - 20-25 minutes;
- before freezing - 15–20 minutes;
- before frying - 5-10 minutes (although chanterelles are rarely boiled).
The frozen mushrooms will be ready 10-15 minutes after boiling. If you are going to fry them, then you do not need to cook them first.
How to cook chanterelles
Pour water into a saucepan and salt - ¹⁄₂ tablespoon of salt is enough for 1 liter. Wait for the liquid to boil and add the mushrooms.
Bring the water to a boil. Then cook the chanterelles as much as needed. Skim off any emerging foam if necessary.
If you are making soup with chanterelles, you can cook them right away with the rest of the ingredients. But only on condition that the mushrooms are very thoroughly washed and peeled. If in doubt, after boiling, transfer the chanterelles to the soup and cook for at least 5-10 minutes for the dish to have a mushroom aroma.
