The cooking time depends on the chosen method and ranges from 20 minutes to 1.5-2 hours. The fastest way to cook a lung is in a pressure cooker.
To speed up the process, you can cut it into medium pieces, but do not grind it. Another nuance: a lung from old animals may take a little longer than a product from young ones.
To make sure the offal is done, pierce it with a fork or knife. If the released liquid is colorless, you can stop cooking, but if not, continue.
The boiled lung can be cooled under pressure, so it will turn out denser, and it will be easier to cut it. To do this, place the food on one plate and cover with the second. Place a small jar of water on top and leave for 1.5-2 hours.

Place the offal in a saucepan and cover with room temperature water. Put on high heat, and after boiling, reduce it to medium or low. Season with salt and spices to taste. Remember to remove foam from the surface.
