How to choose a pork tongue
When choosing a chilled tongue, first evaluate its appearance. The offal should be natural, pale pink in color. Greyish shades, slimy surface or traces of airing usually indicate staleness.
The aroma of a quality pork tongue is meat. Any extraneous notes are a sign that the product has begun to deteriorate.
The offal is elastic and dense to the touch: if you press on it with your finger, the cavity will quickly smooth out. If the tongue has been frozen and thawed several times, it will be flabby, and after pressing it will not regain its shape for a long time.
If you choose a frozen product, make sure that there is practically no ice in the package.

How to prepare pork tongue for cooking
The frozen product must first be thawed. To do this, it is enough to transfer it from the freezer compartment to the refrigerator a few hours before cooking.
Both frozen and chilled tongue must be washed before cooking. Remove larynx trimmings, ligaments and other excess parts from it. Then you can soak it in cool water for 30-40 minutes, and then rinse well again under running water. If dirt is visible on the surface, it is easiest to scrape it off with a knife, brush or hard sponge.

The cooking time depends on the method you choose and will take from 40 minutes to 2 hours or a little longer.
To make sure the food is ready, just pierce it with a knife or fork. If the tip enters easily, and the escaping juice is transparent, the tongue is cooked.

How to cook pork tongue in a saucepan
Boil water and put the offal in it. Toss in a few allspice and black peppercorns, other spices, whole carrots, onion and parsley root if desired. Usually, the ingredients are laid with the tongue. Salt the dish about 10 minutes until tender.
Simmer over low heat and periodically remove the foam that forms on the surface.
A medium-sized tongue will be ready in 1.5-2 hours, but if the offal is very large or from an old animal, it may take longer.

How to cook pork tongue in a slow cooker
Place the offal in the bowl of the apparatus and fill with cold water so that it is completely covered. Add whole peeled carrots and onions for a tastier and more flavorful dish.
Close the lid and set the "Extinguishing" mode. After an hour, remove the foam, add salt and spices to taste and cook in the same mode for another 30 minutes.
