How to choose pink salmon
Quality fish has no external damage. There are no unnatural dark spots on top, and the flesh is pink, not faded. The surface is slightly damp, without sticky mucus or plaque, and the tail and fins are free from drying out and brittleness. The fish or individual pieces are elastic and loose to the touch.
If you buy a whole pink salmon, additionally evaluate the gills: they should be red, without darkening and yellowish or greenish tint.
The smell is natural, fishy, but not harsh and without impurities.
When buying a frozen version, make sure that there is practically no ice in the pack.

How to prepare pink salmon
If the fish is whole, rinse it first and remove the scales in the direction from the tail to the head. After cutting off the head, tail and fins, carefully remove the insides. If you come across pink salmon with caviar, you can salt. Be sure to rinse the cleaned fish again.
It is enough to rinse chilled portioned steaks or fillets under running water.
Transfer the frozen pink salmon from the freezer to the refrigerator compartment a few hours before boiling so that it has time to thaw. Then clean and rinse.
Before cooking, cut the fish into portions or use a knife to separate the fillets from the bones. It is best not to use the head and tail unless you intend to cook ear.
Pink salmon can be marinated before steaming. To do this, rub the pieces of fish with spices and salt, add a little lemon juice. Leave to marinate for 30-40 minutes.

The cooking time depends on the method. So, in water, medium pieces of fish will cook in 10-15 minutes, and steamed in 20-25 minutes. Large ones can take a little longer to cook, and small ones faster.
Finished fish becomes paler, but retains a pinkish tint. The pulp is easily broken with a fork and leaves the bones.

How to cook pink salmon on the stove
In water
Place the fish in a saucepan and cover with cold water until it is completely covered. You can add carrots and onions: put them immediately together with pink salmon. Bring to a boil over high heat, then reduce to low.
Season with salt immediately after boiling or a couple of minutes until tender. You can also throw in boiling water spice to taste, lavrushka, pour in a little lemon juice and olive oil. Cook under the lid and remove the froth from the surface.
