1. Soup with mushrooms
Ingredients
- 1 tablespoon vegetable oil;
- 1 large carrot;
- 1 small onion;
- 8 mushrooms;
- 1½ liter of water;
- 3 medium potatoes;
- salt - to taste;
- ground black pepper - to taste.
preparation
Heat the oil in a frying pan over low heat and roasted chopped carrot, onion and diced mushrooms 5-7 minutes.
In a saucepan bring the water to boil. Add to potato cubes, zazharku and spices. Lightly cover with a lid and simmer for 20-25 minutes until cooked potatoes.
Pyuriruyte soup in a blender. To decorate, you can be removed from pre-zazharki few mushroom slices.
2. Pumpkin soup with chicken
Ingredients
- 1 chicken breast;
- 1 small onion;
- 1 small carrots;
- 500 ml of water;
- 2 potatoes;
- a few sprigs of dill;
- 200 g of gourd;
- little sunflower oil;
- salt - to taste.
preparation
Pour into a saucepan half chopped chicken breast, half onion and half a carrot. Pour the water and bring to boil. Then turn down the heat a little, put a peeled potato and fennel stalks and continue to cook.
After 20 minutes, remove from pan chicken, onions and dill. Add diced
pumpkin and cook until the pumpkin and potatoes are not softened.Chop remaining onion and carrot and fry in hot oil until golden brown. Drain in a separate container from the pan a little broth and pyuriruyte contents of the blender. Then pour broth back zazharku and add salt, stir and warm soup on low heat.
Before serving, put in a soup cooked chicken breast, cut into small pieces and garnish with dill.
3. Spicy lentil soup
Ingredients
- 300 g red lentils;
- 1½ liter of water;
- 1 tablespoon olive oil;
- 1 medium onion;
- 4 garlic cloves;
- 2 medium ripe tomatoes;
- 1 vegetable bouillon cube;
- 1½ tsp ground cumin;
- ½ teaspoon turmeric;
- ¼ teaspoon ground nutmeg;
- salt - to taste;
- 1 bay leaf;
- 1 lemon;
- a few sprigs of parsley.
preparation
Wash lentils, pour 500 ml of water and let stand for 30 minutes. Heat the oil over medium heat in a pan or skillet and roasted chopped onions within a few minutes.
Add chopped garlic, Chopped tomatoes, lentils (drain excess water from it), the remaining water, bouillon cube, spices and bay leaf. Bring to the boil. Then reduce heat, cover and cook for 15-20 minutes, until the lentils are softened.
Remove the bay leaf and pyuriruyte soup blender. Add the juice of a lemon. Garnish with chopped parsley soup ready.
4. Cream soup with broccoli and apple
Ingredients
- 3 medium head of cabbage broccoli;
- 3 tablespoons butter;
- 1 medium onion;
- 1 large apple;
- 700 mL chicken broth;
- 250 mL apple juice;
- 4 sprigs fresh thyme;
- 2 medium lemon peel strip;
- salt - to taste;
- few feathers green onions.
preparation
Separate the broccoli florets from the stems. Cut away the top layer of their stems and finely cut. Melt the butter in a saucepan or skillet over medium heat. Add the chopped onion and peeled and diced apple. Reduce heat, cover and cook for 10 minutes until the ingredients are softened.
Add chopped stems and florets of broccoli, broth, juice, zest and thyme. Bring to the boil on a high flame. Then reduce it and simmer, covered for 20-25 minutes more.
Remove the soup from the stove, remove the zest and thyme. Pyuriruyte soup blender and season salt. Before serving, garnish with chopped onion.
5. Soup with avocado and zucchini
Ingredients
- 2 medium potatoes;
- 1 medium zucchini;
- 1½ liters of chicken broth;
- 2½ ripe avocados;
- salt - to taste;
- ground black pepper - to taste.
preparation
Peel the potatoes and zucchini and cut into cubes. Put into a saucepan, pour broth and simmer until cooked until the vegetables are tender.
Add two peeled and chopped avocado, Salt and pepper and pyuriruyte soup blender. The finished dish garnish with diced avocado.
6. Cheese soup with cauliflower
Ingredients
- 2 tablespoons butter;
- 2 medium onions;
- 2 celery;
- 1 small carrots;
- 3 garlic cloves;
- 2 large potatoes;
- 1½ liters of chicken broth;
- 600 g of cauliflower inflorescences;
- 2 bay leaves;
- 1 teaspoon of dried thyme;
- salt - to taste;
- ⅛ teaspoon ground black pepper;
- 170 g of grated cheddar cheese;
- few feathers green onions.
preparation
Heat the oil in a skillet and place the onion, celery and carrots, diced or small strips. Fry them on medium heat, stirring occasionally, 5-8 minutes, until the onions are softened. Add the chopped garlic and cook another minute.
Add thin slices of potato, broth, chopped cauliflower, Bay leaves, thyme, salt and pepper. Bring to the boil on a high flame. Then reduce the heat slightly, cover a saucepan with a lid and simmer for 12-15 minutes until all the vegetables are soft.
Remove from heat and remove bay leaves. Pyuriruyte soup blender until smooth. Gradually add cheese, still whisking the soup blender. Before serving, garnish with chopped green onions.
7. Bisque
Ingredients
- 100 g sun-dried tomatoes;
- 700 ml of water;
- 1 large tomato;
- ½ avocado;
- 1 clove of garlic;
- salt - to taste;
- 2 teaspoons lemon juice;
- a few sprigs of basil.
preparation
Soak dried tomatoes in 200 ml of water for 30-40 minutes. Peel the tomato and avocado from the peel, seeds and pits. Finely chop all the tomatoes, avocado and garlic, season with salt and lemon juice.
Pour the remaining water and pyuriruyte blender until homogenous. Decorate the ready soup with basil.
8. Soup with zucchini
Ingredients
- 1 tablespoon butter;
- 2 tablespoons olive oil;
- 1 small onion;
- 1 clove of garlic;
- salt - to taste;
- ground black pepper - to taste;
- 2 zucchini;
- 500 ml of water;
- 1 vegetable bouillon cube;
- a few sprigs of parsley.
preparation
The pan or saucepan heat the oil over low heat. Fry chopped onion and garlic, stirring constantly, for 7-8 minutes. Season with salt and pepper.
Cut zucchini crosswise in half and cut into thin strips. Put them to the vegetables and cook 10 minutes, stirring occasionally. Pour in water, add a bouillon cube, and bring to a boil. Cook for another 10 minutes until the zucchini is not softened.
Pyuriruyte soup in a blender and add salt and pepper if necessary. Before serving, garnish the finished dish with parsley.
9. Soup with carrots and potatoes
Ingredients
- 500 g of potato;
- 1 small onion;
- 500 g of carrots;
- 2 medium tomatoes;
- 2 liters water;
- 3 tablespoons of vegetable oil;
- salt - to taste;
- ground black pepper - to taste;
- a few sprigs of parsley.
preparation
Clean the vegetables, cut into cubes and place in pan. Add the butter and spices. Cover with water, bring to boil and simmer for about an hour until vegetables soften.
Pyuriruyte finished soup blender and garnish with parsley.
10. Soup with spinach
Ingredients
- 400 g of spinach;
- 700 ml of water;
- 2 tablespoons olive oil;
- 3 garlic cloves;
- 1 small onion;
- a small piece of fresh ginger;
- 1 medium potato;
- 1 teaspoon lemon juice;
- salt - to taste;
- ground black pepper - to taste.
preparation
Wash spinach, put into a pot and pour 500 ml of water. Bring to a boil, reduce heat, cover and simmer for 5 more minutes.
In a skillet, heat the oil over medium heat. Put the chopped onion and garlic, grated ginger and fry for 3-4 minutes, stirring occasionally.
Add the spinach, diced potatoes, the remaining water and lemon juice. Bring to the boil and cook for another 10 minutes on low heat.
Pyuriruyte blender until smooth. Season with salt and pepper. Ready soup can be decorated with fresh spinach leaves.
11. Beetroot soup
Ingredients
- 6 medium svokol;
- 2 medium carrots;
- 1 medium onion;
- 1 tablespoon vegetable oil;
- 750 ml of water;
- 1-2 vegetable bouillon cubes;
- 2 lemons;
- 1 teaspoon of sugar;
- salt - to taste;
- ground black pepper - to taste;
- a few sprigs of dill.
preparation
Clean the vegetables and cut into cubes. Put them in a saucepan or pot with hot oil and sear over medium heat for 3 minutes.
Add water, bouillon cube, lemon juice and spices and simmer for 30 minutes. Then pyuriruyte soup blender and garnish with dill.
