Summer - a wonderful time for a delicious breakfast and light! Fresh vegetables and herbs, berries and fruits - you can cook virtually anything your heart desires.
This time I decided to make a small selection of light and healthy breakfast. Avocado, radish, spinach, tomatoes, eggs, berries and, of course, oatmeal.

Baguette with avocado and radish
The recipe used round bun with sesame seeds, but you can choose any other bread. But I'm not quite sure that it will be delicious with dark bread.
Ingredients: baguette or bun, 1/2 avocado, 2 tablespoons of lemon juice, several small radishes, salt and pepper to taste.
Preparation. Bread little fry in a toaster or a ship on a dry, heated pan. Avocados are cleaned, cut into small chunks and mash with a fork, mixing it with lemon juice. Salt and pepper to taste. Radishes cut into thin rings or half rings. Bread spread with avocado paste and spread on top of radishes.

Scrambled eggs with tomatoes and spinach in pita bread
I love spinach! I especially like the ravioli with spinach and cottage cheese Pancakes with spinach and garlic, and even just spinach, stewed in butter with garlic. Spinach is very useful and it does not have a pronounced taste, so you can add a huge amount of food (and even in fruit smoothies). So yaishenka should get a really tasty and useful.
Ingredients: 4 large eggs, 1/2 cup fresh spinach, olive oil, 2-3 tomatoes, pita, salt and pepper to taste.

Cold oatmeal with berries

Ingredients: oatmeal, berries, milk, sour cream or Greek yogurt, sugar.

And, of course, do not forget about the berry and fruit salads! Strawberries with banana and yogurt with no additives - delicious breakfast and summer!
And if you mix in a blender until a solid mass of a simple cottage cheese, strawberries, a little 10% cream and powdered sugar, you get a very gentle and delicious cheesecake dessert! The same can be done with any berries - blueberries, raspberries, cherries!
