Salad with marinated zucchini, arugula and feta
Ingredients
- 2-3 medium yellow or green zucchini;
- 120-180 g arugula;
- ½ cup fresh herbs (basil, mint, parsley);
- ¼ cup feta cheese;
- 3 tablespoons of lemon juice;
- 1 lemon (peel);
- 4 tablespoons of olive oil.

Put the lemon zest and lemon juice in a small bowl and stir. You should get 3 tablespoons. Then add the olive oil. Again all mix well.
Wash the zucchini and cut into thin half-rings. Fill them with olive oil and lemon juice, salt, pepper and leave to marinate for 15-30 minutes.

Grill salad with zucchini and walnuts
Ingredients
- ½ cup walnuts;
- 1 clove of garlic;
- 2 large leeks;
- 2 large zucchini;
- 2 tablespoons fresh lemon juice;
- 5 tablespoons olive oil;
- salt and ground black pepper.
