Recipe № 1. Cucumber salad "Sunomono" with sesame seeds
Ingredients:
- 2 large cucumbers;
- 1 teaspoon coarse salt;
- 3 tablespoons rice vinegar;
- ¼ teaspoon of soy sauce;
- 1 teaspoon sesame oil;
- 1 tablespoon of sugar or honey;
- 2 teaspoons toasted sesame seeds.

Wash and slice the cucumber. You can cut them into slices, and can, as in the original recipe, use a special vegetable preparation, which will turn cucumbers in a green serpentine. Put them in a small bowl, sprinkle with salt and leave to rest for 10 minutes.
Remove the cucumbers from the bowl, remove excess moisture, which managed to stand under the action of salts and transfer to a bowl.

Ingredients:
- 1 large cucumber;
- 3 large avocados;
- 1 lemon;
- 80 g of feta;
- 1 tablespoon finely chopped fresh dill;
- salt and black pepper to taste.

Slice the cucumber and avocado on the same size pieces, add the juice of one lemon and dill and mix well. Crumble feta on top. If it considers that the salt is not enough (it depends on the salinity of feta), the salad with salt to taste and be sure to pepper, preferably freshly ground pepper.
Recipe № 3. Asian cucumber salad with carrots
Ingredients:
- 2 large cucumbers;
- 3 large carrots;
- 2 tablespoons rice vinegar;
- 2 tablespoons lime or lemon juice;
- 2 tablespoons of honey;
- 2 teaspoons sesame (or sunflower) oil;
- 1 teaspoon salt;
- 1 teaspoon red pepper flakes acute;
- 1 tablespoon chopped cilantro;
- 1 teaspoon sesame seeds.

Cut the carrots and cucumbers into thin strips specially adapted for cutting vegetables or simply into thin slices. In a small bowl, mix together the ingredients for the filling: rice vinegar, lime juice, honey, sesame oil, salt, chilli, coriander and sesame seeds.
Fill salad, mix well and return to the refrigerator for about 20 minutes, previously covered with cling film bowl. Serve, if desired add a little sesame or coriander.
Recipe № 4. Thai cucumber salad with peanuts
Ingredients:
- ⅓ cup rice vinegar;
- 2 tablespoons sugar;
- ½ teaspoon sesame oil;
- ¼-½ teaspoon hot red pepper;
- ½ teaspoon salt;
- 2 large cucumbers;
- 3 a feather green onion;
- ¼ cup crushed peanuts.

In a small bowl, mix together the ingredients for the salad dressing: rice vinegar, sugar, sesame oil, red pepper and salt. Leave the mixture for a short time, so she insisted.
Wash and slice the cucumbers and onion, chop peanuts, put the ingredients in a bowl and mix. Add the dressing, again mix well and serve.
Recipe № 5. Cucumber salad with strawberries, feta and basil
Ingredients:
- 1 tablespoon red wine vinegar;
- 2 tablespoons of honey;
- 2 tablespoons fresh orange juice;
- ⅛ teaspoon salt;
- ½ teaspoon orange zest;
- 2 cups sliced strawberries;
- 2 cups sliced cucumbers;
- 3 tablespoons feta;
- 2 tbsp chopped fresh basil;
- orange peel to decorate (optional).

Wash strawberries and cucumbers, cut into equal size pieces and place in a bowl. In a separate bowl, mix the ingredients for the salad dressing: vinegar, honey, orange juice, salt, and orange zest.
Pour the cucumber and strawberry sauce and mix well. Sprinkle crumbs of feta cheese and chopped fresh basil leaves. Before serving, salad can be decorated with curls of orange peel.
As you can see, all five recipes are simple to prepare, does not require any exotic ingredients for them. If you do not have sesame oil, you can replace it with sunflower or corn. Taste is not as Asian, but the salad still get excellent. If you do not like spicy food or it is contraindicated to you, you can either reduce the amount of hot peppers, or even remove it from the recipe.
