Simple cheesecake with eggs

This recipe proves once again that a pack of ready puff pastry - baker's best friend-lover. In just a few minutes you can safely collect classic Italian cake filled with fresh spinach, egg and cheese mixture.
Ingredients:
- packaging of yeast puff pastry;
- 200 g ricotta;
- 60 g of grated hard cheese;
- 100g grated Mozzarella;
- 100 g of fresh spinach;
- 4 eggs;
- 2 tablespoons olive oil.
While the dough is thawed, washed and simmered obsushennye spinach leaves with a drop of olive oil until they fade.
Connect the components of the filling: ricotta, both types of cheese, stewed spinach and egg. Add a pinch of salt.
If necessary, the ricotta can replace the more common and available product - conventional cheese average fat content which is previously well squeezed through cheesecloth.
Roll dough into a layer thickness of about 3 cm and divide into two unequal parts: a large lay on the bottom oiled and floured mold (20 cm in diameter) so as to cover the wall. Top with cheese filling, level it with a spoon and take three recesses.
Beat egg in each of the recesses.
A smaller part of the test will "cover" of the pie, which is fastened to the edges of the basics, and cut off the excess. Make a cross-shaped incision in the center of the cake to release excess fluid and grease the cake residues of olive oil.
Bake at 200 degrees 50 minutes.
Before removing from the mold and cutting the cake necessarily cooled.
