Recipe № 1. Spicy homemade ketchup
Ingredients:
- 1 tbsp. l. olive oil or any other vegetable oils;
- 1 small onion, finely chopped;
- 2 crushed garlic cloves;
- 1/4 cup sugar;
- 1/2 h. l. paprika;
- 1/4 h. l. ground allspice;
- 1/4 h. l. ground cloves;
- 1/3 cup white vinegar;
- 1 tbsp. l. tomato paste;
- 2 jars (240 ml) tomato pulp;
- salt and freshly ground black pepper to taste.
Preparation. Heated in a small pan vegetable oil, add to the onion and garlic and passeruete seven minutes over moderate heat.
Then add to sugar, paprika, ground allspice and cloves and cook until until the sugar has melted. Then add vinegar and tomato paste and boil over medium heat for 3 minutes until thick. When the mass thickens, add to the tomato pulp and leave to simmer for 15-20 minutes until thick.
Ready ketchup thoroughly whip blender until homogeneous mass, and at the end add salt and freshly ground pepper to taste.
Recipe № 2. Acute homemade ketchup
Ingredients:
- 2 tbsp. l. olive oil;
- 1 chopped medium onion;
- 1 crushed garlic clove;
- 1 tbsp. l. tomato paste;
- 1 h. l. salt;
- 1 h. l. of ground mustard seed;
- 1/2 h. l. paprika;
- large pinch of ground cloves;
- 1/4 h. l. ground allspice;
- 1/2 h. l. ground (flakes or) hot peppers;
- 1 large bank (850 ml) in brine tomatoes, crushed;
- 1/2 cup sugar;
- 1/4 cup of apple cider vinegar.
Preparation. Heated in a small pan with a thick bottom vegetable oil and adding onion, passiruete it for 6-8 minutes. As a result, the bow should be slightly golden. Then add the garlic and passeruete 1 more minute. Next, add tomato paste, salt, spices and other cooking, stirring constantly for 1 minute. Then add the sugar, vinegar and chopped tomatoes in their own juice. The mixture is allowed to boil over medium heat until thickened (about 45 minutes).
Ready ketchup whisk blender until smooth and rub through a sieve to the mixture turned silk.
Recipe № 3. Acute spicy ketchup
Ingredients:
- 1 medium onion, diced;
- 1 tbsp. l. olive oil;
- 1 large bank (850 ml) in brine tomatoes;
- 1/2 cup apple cider vinegar;
- 1/4 cup sugar;
- 1 h. l. dark honey;
- 1/2 h. l. cinnamon;
- 1/2 h. l. ground cloves;
- 1 h. l. celery seed;
- 3 acute pickled pepper;
- salt to taste.
Preparation. In a small saucepan Preheat the vegetable oil. Add onion and passeruete it until golden brown. Then add tomato juice with, push their spoon and bring it to the boil. To add all the other ingredients and leave to simmer for 1 hour. After that, whip ketchup blender until smooth puree and keep the fire until until the mixture is the desired consistency.
Recipe № 4. Ketchup with curry
Ingredients:
- 2 tbsp. l. olive oil;
- 1 chopped medium onion;
- 1 crushed garlic clove;
- 1 tbsp. l. tomato paste;
- 1 h. l. salt;
- 1 tbsp. l. Curry Powder;
- 1 h. l. milled grain mustard;
- 1/2 h. l. paprika;
- large pinch of ground cloves;
- 1/4 h. l. ground allspice;
- 1/2 h. l. ground red pepper;
- 1 large bank (850 ml) in brine tomatoes;
- 1/2 cup sugar;
- 1/4 cup of apple cider vinegar.
Preparation. Preheat the pan on a small cooking oil and add the onion. Passeruete it until golden brown, then add the garlic and cook 1 more minute. Then add the tomato paste, salt and all the spices, all well mixed and add the sugar, vinegar and tomatoes in their own juice. Boil ketchup on low heat until until it thickens (about 45 minutes).
Thereafter, the mixture was beat blender until smooth and pass through a sieve. Ready ketchup you can pour into the banks and keep in the refrigerator for 1 month.
Recipe № 5. Spicy ketchup with ginger
Ingredients:
- 1 chopped medium onion;
- 2 tbsp. l. grated fresh ginger;
- 2 tbsp. l. minced garlic;
- 1 ½ st. l. vegetable oil;
- 1 cup dry pink or dry white wine;
- 1/2 cup tomato paste;
- 3 tbsp. l. apple cider vinegar;
- 3 tbsp. l. Sahara;
- 1 tbsp. l. Dijon mustard;
- 1/2 h. l. salt;
- 1/2 h. l. black pepper;
- 1/8 h. l. cayenne pepper;
- 2 tbsp. l. lemon juice.
Preparation. In a small saucepan Preheat the vegetable oil and fry the onion, garlic and ginger until soft. Then add the wine, tomato paste, sugar, vinegar, mustard, salt, black and cayenne pepper, everything well mixed and simmer until thickened even 5-6 minutes. After that, shoot the sauce from the heat, you are giving to cool slightly, add lemon juice and whip his blender until smooth. Ready ketchup rubbed through a sieve.
