Recipes: 5 quick and healthy salad with watermelon

The watermelon pulp contains a large amount of B vitamins, PP, C, carotene and folic acid. Also, there is a potassium compound, a large amount of fiber and carbohydrates. In general, not a berry, but a dream. And so it is now the season of watermelons, we decided to prepare for you a selection of the very unusual but tasty salads.
Salad with watermelon, cucumber and feta
Ingredients
- 4 cups of watermelon;
- 2 cups cucumber;
- ¼ cup red onion;
- ⅓ cup feta cheese;
- 2-3 tablespoons of honey;
- 2-3 tablespoons of lemon juice or lime juice.
preparation
Watermelon clean from the bones and cut into cubes. Chop the cheese. Cut the cucumber into small pieces, and onion half rings. Mix the watermelon, onion, cucumber and cheese in a salad bowl. Separately, mix the honey and lemon or lime juice for dressing. Add the dressing to the salad and mix everything well. If necessary, add more honey or juice.
Salad with watermelon, feta and arugula
Ingredients
- 3 cups of watermelon;
- ½ cup feta cheese;
- 210 g arugula;
- ¼ red onion;
- 2 tablespoons balsamic vinegar;
- 2 tablespoons olive oil;
- salt and freshly ground black pepper to taste.
preparation
Rinse arugula under running water and pat dry with paper towel. In a separate bowl, mix together all the ingredients for the filling: olive oil, balsamic vinegar, salt and black pepper. Watermelon clean the seeds and cut into cubes. Chop the cheese. Onion cut into thin half-rings. Put in a salad bowl of watermelon, arugula, onions, feta, salad dressing, and all mix well.
Salad with watermelon, tomatoes and basil
Ingredients
- 2 Tomato yellow;
- 4 cups of watermelon;
- 300 g of cherry tomatoes;
- 1 ½ tablespoons olive oil;
- ½ teaspoon of apple cider vinegar;
- sea salt;
- freshly ground black pepper;
- fresh basil.
preparation
On large dish lay a layer of yellow tomato, diced into small slices. In a separate bowl, combine the diced watermelon and cherry tomato halves. Pour the resulting yellow mixture over tomatoes. Then, in a small bowl, combine olive oil and apple cider vinegar, season with their salad. Salt and pepper. Before serving, sprinkle the finished dish with fresh basil leaves.
Salad with watermelon, chicken and nuts
Ingredients
- 120 g of salad mix;
- 1 cup watermelon;
- ¼ cup pine nuts (substitute almonds or walnuts);
- ¼ cup feta cheese;
- 1 cup of chicken;
- 3 tbsp lemon juice or lime;
- 2 tablespoons of honey;
- 2 tablespoons olive oil;
- ½ teaspoon of garlic;
- 3 mint leaf;
- freshly ground black pepper.
preparation
Evenly bowls greens. Watermelon clean from the bones and cut into cubes. Chicken fillet slice and cook on the grill. Chop the cheese. Then, on each plate lay a watermelon, chicken and cheese. Sprinkle with nuts.
In a separate bowl, combine the olive oil, honey, lemon or lime juice, chopped garlic, freshly ground black pepper and mint leaves, mix well. Season the salad and serve.
Caprese salad with watermelon
Ingredients
- 2 large slices of watermelon;
- ½ kg cherry tomatoes;
- 120 g fresh mozzarella;
- 2 tablespoons olive oil;
- ½ teaspoon salt;
- ½ teaspoon pepper;
- 2 tablespoons of honey;
- a handful of fresh basil leaves;
- balsamic vinegar (to taste).
preparation
Preheat the grill or pan-grill. Each slice of watermelon, cut into four triangles, brush both sides with olive oil, salt and pepper. Add a little honey on each triangle and send it to the grill.
Ready watermelon triangles on a plate. Put on the watermelon quartered cherry tomatoes, mozzarella and basil. Add a little salt, pepper and balsamic vinegar.
