Recipe: Broccoli with oyster sauce

Finally I found the perfect fast, tasty and very healthy dishes - a Thai cuisine. I propose to start with one of the most simple and very delicious food - broccoli in oyster sauce.
I have to say - the recipe is not meant to perfectly, as in every cafe, he had his own constituents. Moreover, in the same cafe its taste and ingredients are varied depending on what the chef has changed. But all options were delicious in their own way. So I suggest you a few options, and you have yourself choose the one that more like it.
Ingredients: 1 medium broccoli (about 1 kg) 1 medium carrot, 100 g of cashew 4 cloves of garlic, 2 tablespoons sesame oil, 2 teaspoons of sugar, 4 tablespoons thick oyster sauce, 4 tablespoons water.
Number of shows about as depending on the number of fruits and their relationship to sweet, you can vary the amount of water, oyster sauce and sugar.
Preparation. Sliced into thin slices broccoli, carrots and - small cubes thickness of about 0.5 cm and a length of 1.5-2 cm. If you have curly grater, cutting carrots better take advantage of it. Peel garlic cloves and crush with a knife.
Preheat the wok or frying pan, add to the sesame oil, garlic, broccoli and carrots. Passiruete it all just a couple of minutes. Then add to nuts, oyster sauce, a little water and sugar. Well all mixed and cook for another two to three minutes. Try to taste and add the ingredients that your taste is not enough (a lot of sauce, sugar and water). Turn off and immediately served.
Vegetables should get stir fry - in any case, not stewed, not soft or fried. They need to get a little stewed and crisp. If you look at the appearance, the broccoli should be bright green and carrots - orange. During cooking can try and immediately remove from heat, once we felt that the vegetables become soft.
And now for the variations! Option with carrots and cashews I like the most. Sometimes it is prepared only from the broccoli and garlic. The sauce is always the same, changing only vegetables. A few more options: broccoli and onions (onions added to the very end, as must remain a little crunchy), broccoli, carrots and onions.
Sesame oil can be bought in any large supermarket, oyster sauce - Asian cuisine in the departments (for all sushi), or in some small shops that sell goods for Chinese, Thai and Japanese cuisine.
This dish is like, even those who do not really love vegetables. If you are adventurous, you can add during cooking sliced hot peppers and remove it in just a few minutes after the start of cooking. Or not to make a mistake (hot peppers can be different) - add a bit of dry cayenne pepper at the end.
